  • 1/4 cup(s) Classic White Chips
  • 1 tablespoon(s) Unsweetened Cocoa
  • 2 ounce(s) (about 5 tablespoons) mascarpone cheese
  • 2 cup(s) freshly brewed coffee or chilled coffee
  • 3/4 cup(s) vanilla syrup
  • 3/4 cup(s) rum syrup
  • 1 Ghirardelli Ganache Mixture
  • 1 cup(s) whipped cream, for garnishing

Directions
This recipe was developed for Ghirardelli by Elizabeth Falkner. Rum syrup, a flavored syrup used in coffees, drinks, and baked goods, can be found at most grocery or specialty food outlets. Serve with a biscotti.

In a small bowl, mix the mascarpone cheese and white chips. Set aside in refrigerator for about 20 minutes.

Set out four tall clear glasses. In each glass, spoon in one-quarter of the mascarpone mixture. Next, spoon in one-quarter of the ganache mixture. Pour in 1/2 cup of the coffee. Add 3 tablespoons vanilla syrup and 3 tablespoons rum syrup. Top with whipped cream and dust with unsweetened cocoa.
